Now that the weather is finally warming up, my food thoughts turn to what I call picnic food. Salads are a great cookout side dish and this is one of my favorites. The dressing is the same one I use for the Kansas Cucumber Salad and I just substitute pasta for the cucumbers or, even better, just add the pasta WITH the veggies. I am ready to dig in right now.
2 cups elbow macaroni, uncooked
1 cup mayonnaise
1/4 cup granulated sugar
4 tsp. apple cider vinegar
1/2 tsp. dried dill weed
1/2 tsp. salt
Cook the pasta in boiling water for 12 minutes. Drain the water and rinse under cold water to stop the cooking process and cool the pasta. While the pasta is cooking, combine the remaining ingredients in a bowl.
Pour the cooled pasta into the bowl with the dressing and stir to combine. Refrigerate for at least an hour and enjoy!
