Hamburger Soup

We are not big fans of cold weather around here, but fall is here and winter is on its way.  The best thing about cooler weather (besides the cute sweaters and boots) is homemade soup!  This Hamburger Soup recipe is a hearty and healthy meal full of beef and vegetables that is sure to fill you up.  All I needed was a couple of cheesy garlic biscuits on the side and my meal was complete.

This recipe was adapted slightly from The Bewitchin’ Kitchen.

1 lb. lean ground beef

1 green pepper, diced

1/2 onion, diced

4 carrots, sliced

4 celery stalks, sliced

1/2 tsp. minced dried garlic

28 oz. can crushed tomatoes

4 cups beef broth

1 tbsp. Italian seasoning

2 bay leaves

1 tsp. salt

1/2 tsp. black pepper

1/4 tsp. red pepper flakes

In a large skillet, cook the ground beef, pepper, onion, carrots and celery until the meat is cooked through and the veggies are tender.

While this is cooking, put the remaining ingredients in a slow cooker.  Add the beef and veggie mix when there is no pink left in the meat.  Cook on high for 3-4 hours or on low for 6-7 hours.  Remove the bay leaves before serving.
